Traditional Samoan Chop Suey (Sapa Sui) (6-8 Servings)

What you need:

  1. Mung beans (250 grams)
  2.  Noodles (1 glass)
  3. Oil (2 tbsp.)
  4. Onion (1 large, diced)
  5. Garlic cloves (2-4, crushed)
  6. Ginger root (1 tbsp., freshly grated)
  7. Mincemeat (300 grams, beef/chicken/pork)
  8. Soy sauce (2 tbsp. and ½ cup)
  9. Water (2 cups)
  10. Ketchup (2 tbsp.)
  11. Veggies (2-5 cups)
  12. Stock powder (1 tbsp., vegetable/chicken/beef)

Cooking Steps:

  1. On medium heat fry onion, garlic and ginger in a large pan
  2. Add meat. Stir for 2 minutes to fry so it does not burn.
  3. Add water and soy sauce to cover the meat almost completely and let it simmer
  4. Get the noodles ready and snip them to make them short
  5. Add noodles and 1 cup of water
  6. Add remaining ingredients to make it look soupy
  7. Let is simmer for 10-15 minutes and stir on medium heat

You can now serve the content as is.

Faiaai Pilikaki 

Ingredients:

  1. 3 cans of mackerel
  2. onion
  3. 2 cans of coconut milk
  4. 1 tsp of salt
  5. 2 tsp of mayonnaise
  6. 2 bags of spinach

Cooking Steps:

  1. 1 pan
  2. Open cans of mackerel and dry them out
  3. Chop the onions
  4. Mix the mackerel with coconut milk, salt, onions and mayonnaise
  5. Add 1 bag of spinach in the pan
  6. Pour the mackerel mix on top of spinach
  7. Top with the other bag of spinach
  8. Bake in oven for 20 minutes (350 F)We normally eat this with green banana or taro.
